INGREDIENTS
1 5lb. Pork Belly, Smoked for 4 hours
Rub:
1 teaspoon of:
Granulated Garlic
Ground Ginger
Cumin
Cinnamon
Salt
Pepper
Dried Thyme
Paprika
Blistered Tomato Vinaigrette:
16 Roma Tomatoes, Blistered
1 Sweet Onion
1 Jalapeno
1 tablespoon Roasted Garlic
1 tablespoon Sugar
8 tablespoons Sherry Vinegar
8 tablespoons Balsamic Vinegar
1/4 cup Paprika
1 cup Extra Virgin Olive Oil
4oz. of canned Tomato Juice
Dish:
32 oz. Angel Hair Pasta
1 cup Heavy Whipping Cream
4 tablespoon Butter
1 cup Parmesan
4 tablespoon Egg Yolk
8 oz. Chopped Pork Belly
8 oz. Great Northern Beans
1 cup Blistered Tomato Vinaigrette
DIRECTIONS
- Add chopped smoked pork belly and beans to hot pan. Allow pork to render and cook until slightly crispy, about 4-5 minutes
- Add butter, cream, and parmesan. Whisk until parmesan is melted.
- Remove from heat and whisk in egg yolk until completely incorporated
- Add vinaigrette and angel hair pasta, toss together
- Add salt and pepper to taste and serve
