INGREDIENTS

1 5lb. Pork Belly, Smoked for 4 hours

Rub:
1 teaspoon of:
Granulated Garlic
Ground Ginger
Cumin
Cinnamon
Salt
Pepper
Dried Thyme
Paprika

Blistered Tomato Vinaigrette:
16 Roma Tomatoes, Blistered
1 Sweet Onion
1 Jalapeno
1 tablespoon Roasted Garlic
1 tablespoon Sugar
8 tablespoons Sherry Vinegar
8 tablespoons Balsamic Vinegar
1/4 cup Paprika
1 cup Extra Virgin Olive Oil
4oz. of canned Tomato Juice

Dish:
32 oz. Angel Hair Pasta
1 cup Heavy Whipping Cream
4 tablespoon Butter
1 cup Parmesan
4 tablespoon Egg Yolk
8 oz. Chopped Pork Belly
8 oz. Great Northern Beans
1 cup Blistered Tomato Vinaigrette

DIRECTIONS

  1. Add chopped smoked pork belly and beans to hot pan. Allow pork to render and cook until slightly crispy, about 4-5 minutes
  2. Add butter, cream, and parmesan. Whisk until parmesan is melted.
  3. Remove from heat and whisk in egg yolk until completely incorporated
  4. Add vinaigrette and angel hair pasta, toss together
  5. Add salt and pepper to taste and serve
