Crafted with a unique and complex blend of high-rye bourbon finished in rum, cognac, sherry, and maple syrup barrels. This custom bourbon was made for Hotel Walloon by our seasoned bar team, Owen and Chris, at Iron Fish Distillery.
Owen and Chris started the process by each creating their own custom blends at the distillery located in Thompsonville, Michigan. They selected their favorite from the four and then did a blind taste test to determine which version would be best for guests of Hotel Walloon.
Our seasoned bar team selected four cask bourbon because it is a unique and complex blend of bourbon finished in four different barrels. With aromas of spice and orange as you take your first sip, this blend offers a slight smooth brown sugar sweetness through the body followed by a hint of molasses and cedarwood on the finish.
“We wanted something that would be accessible to all of our guests who come to the Hearth Room Bar for a classic Old Fashioned, Smoked Manhattan, or another bourbon cocktail”, said Bar Manager, Owen. “But we also wanted to do something that would appeal to the bourbon afficionados who will be able to sip it neat or enjoy it with a large ice cube.
Iron Fish Distillery was founded in 2016, as Michigan’s first farm distillery growing grain and distilling spirits, and barrel finishing sourced whiskey.
Located along the Betsie River watershed on a long-time abandoned 120-acre farm, this MAEAP certified working farm and distillery manages step of the soil-to-spirit process.
Iron Fish also sources bourbon for finishing in barrels from around the world. To date, their library of barrel aged spirits exceeds 2,400 barrels, consisting of carefully sourced farm barrel finished whiskies and estate whiskies distilled from grain grown on the farm.
